Blackberry Cheese Crostini
Simple, delicious and versatile! This appetizer takes little time and uses only a few ingredients packed with flavor. It will dazzle your appetizer table and your guests.

Blackberry Cheese Crostini

Ingredients
1 Baguette
1 Pint Blackberries
1 Tbsp. Balsamic Vinegar
4 oz. Cream Cheese or Goat Cheese
Zest of one lemon
1 Tbsp. of Heavy Cream
Fresh Rosemary
Salt, to taste
Pepper, to taste
Directions
- Preheat your oven to 400 degrees F.
- Slice your baguette into 1/2" rounds and lay them on a sheet pan. Drizzle with olive oil and a sprinkle of salt.
- Bake them for about 5 minutes, flip over, and bake on the second side until golden.
- Meanwhile, in a small pan, combine half of your blackberries with one tablespoon of balsamic vinegar and a sprig of fresh rosemary.
- Simmer for 5 minutes, until the balsamic begins to thicken, and use the back of a fork to mash the berries.
- Remove mixture from the stove, and pour over the other half of the blackberries. Stir to combine. Remove the rosemary sprig.
- Allow the toasted rounds and blackberry mixture to cool.
- In a separate bowl, combine the cream cheese or goat cheese with one tablespoon of heavy cream, zest of one lemon, salt and pepper.
- To serve, spread the cream cheese or goat cheese over each toasted bread round. Spoon a whole blackberry along with some of the balsamic glaze over the goat cheese. Enjoy!
