Blackberry Cheese Crostini

Ingredients
1 Baguette
1 Pint Blackberries
1 Tbsp. Balsamic Vinegar
4 oz. Cream Cheese or Goat Cheese
Zest of one lemon
1 Tbsp. of Heavy Cream
Fresh Rosemary
Salt, to taste
Pepper, to taste
Directions
  1. Preheat your oven to 400 degrees F.
  2. Slice your baguette into 1/2" rounds and lay them on a sheet pan. Drizzle with olive oil and a sprinkle of salt. 
  3. Bake them for about 5 minutes, flip over, and bake on the second side until golden. 
  4. Meanwhile, in a small pan, combine half of your blackberries with one tablespoon of balsamic vinegar and a sprig of fresh rosemary. 
  5. Simmer for 5 minutes, until the balsamic begins to thicken, and use the back of a fork to mash the berries. 
  6. Remove mixture from the stove, and pour over the other half of the blackberries. Stir to combine. Remove the rosemary sprig. 
  7. Allow the toasted rounds and blackberry mixture to cool. 
  8. In a separate bowl, combine the cream cheese or goat cheese with one tablespoon of heavy cream, zest of one lemon, salt and pepper. 
  9. To serve, spread the cream cheese or goat cheese over each toasted bread round. Spoon a whole blackberry along with some of the balsamic glaze over the goat cheese. Enjoy!
