Fruit & Cream Cheese Danish Pastry

Ingredients
Fresh Blueberries
Fresh strawberries, stems removed and cut in half
1 tablespoon sour cream
3 tablespoons granulated sugar
2 tablespoons lime juice, freshly squeezed or bottled
Lime zest from one whole lime
2–1/2 teaspoons vanilla extract
3 tablespoons melted butter, for brushing
Sanding sugar
1-2 sheets frozen puff pastry thawed
Directions
- Preheat oven to 400 F.
- On a lightly floured surface, unfold the thawed puff pastry. Using a 4.5 biscuit cutter cut out four rounds.
- With a smaller cutter or drinking glass, cut out smaller rounds inside those rounds to score the dough.
- Transfer the rounds to a parchment paper lined baking sheet. Repeat the above steps with the scrap pastry dough.
- In a bowl, combine the cream cheese, sour cream, granulated sugar, lime juice, vanilla extract and lime zest. Mix until smooth and creamy.
- Place two tablespoons of the mixture in the center of each puff pastry circle and spread, leaving a 1/4 inch rim.
- Arrange your blueberries and strawberries on top.
- Bake for 15 minutes.
- Allow pastry to cool down to room temperature before enjoying.
